Aubergine Cannelloni Bake

Ingredients
1 or 2 aubergines depending on size
3 or 4 vine tomatoes
Salad leaves
Mozzarella
1 clove of garlic
Basil leaves

Cut the aubergine lengthways ½ cm thick, brush with olive oil, rub with garlic then place on foil under the grill.  Grill the aubergine until the strips have softened then allow to cool.  Now you will need to make the tomato sauce. Take the skin off the tomatoes by blanching them in boiling water, then chop into quarters and place in a pan with olive oil, chopped garlic and a little tomato puree. Once the mixture begins to simmer place the lid on and leave on a low heat for 20 – 30 mins stirring every now and then to stop the tomatoes from sticking.(Alternatively you can save time here by using passata instead of making your own sauce).  Once the aubergine is cool enough to handle take one strip at a time, place a little piece of mozzarella and a small leaf of basil at one end of the aubergine and roll up lengthways.  Repeat this with all the slices and place, seam-side down in a baking dish. Cover with your tomato sauce, grate a little cheddar cheese over the top and bake for 40-45 mins in a medium oven. Once cooked, serve with a green leafy salad and some warm crusty ciabatta.
