Orange and Olive Salad
ground black pepper
Peel oranges, making sure all the pith is removed.
Slice them across into rounds and divide between small plates.
Slice an onion very thinly and scatter on top.
Season with salt, freshly ground black pepper and a little finely chopped fresh chilli if you like.
Cut best black olives in oil off their stones, and scatter the pieces over the salad.
Dress with a little good olive oil, and lemon juice to taste.
