Stuffed Red Kuri Squash

Ingredients

1 squash
110g soft goats cheese
225g mushrooms, finely chopped
2 spring onions, finely chopped
3 garlic cloves, finely chopped
2 tbsp olive oil
salt and freshly ground black pepper

Method

Preheat the oven to 230C/450F/Gas 8

Slice the top of the squash and scoop out the seeds to form a hollow

Heat the olive oil in a frying pan and lightly fry the mushrooms with the garlic

Allow the mushrooms to cool and then mix with the goats' cheese and the spring onions

Season well

Scoop the mixture into the hollow of the squash and place the “lid” of the squash back on top

Bake for 40-45 minutes, or until the squash is tender
