Stuffed Peppers
Ingredients
Four mixed peppers, halved
One small red onion
2 cloves of garlic, crushed
Tsp each of coriander, cumin, paprika and cinnamon
50g pine nuts, 50g raisins
Mug of mixed gourmet rice
One mango
One veg stock cube
Black pepper
Grated cheese
Method
Fry onion and garlic, add spices and nuts and cook for one minute then add rice and raisins.
Mix together well and add ¾ of a pint of veg stock and simmer until tender.
When cooked mix in chopped mango.
Fill peppers with rice mixture and black pepper.
Place into dish with ¼ of a pint of veg stock and cover.
Cook gas 5/190c/375f for 1¼ hours.
When cooked sprinkle with grated cheese and grill
